1 cup butter
1 cup granulated sugar
½ cup corn syrup
2-¾ cups all-purpose flour
1 cup unblanched almonds, chopped
1 tbsp cinnamon
2 tsp ground ginger
2 tsp ground cloves
1 tsp baking soda
In a bowl, mix butter and sugar until creamy, and then stir in corn syrup.
Combine flour, almonds, cinnamon, ginger, cloves and baking soda; then gradually stir into butter mixture to make dough.
Divide dough into four portions. On a lightly floured surface, roll each into 1-½-inch cookies. Wrap in plastic wrap and refrigerate until chilled (thaw before baking).
Cut cookies into ¼-inch thick slices, and place them 1 inch apart on a greased baking sheet.
Bake in an oven at 400 degrees for 10-12 minutes or until golden brown. Let cool for 3 minutes before consumption.
